Marshino Cherries

4 1/2 pounds of white cherries
BRINE:
2 Tablespoon salt
1 teaspoon alum
1 quart water
Remove pits from cherries and let stand in brine over night. Rinse in cold water
Make a heavy syrup of:
8 1/2 pounds white sugar
1 oz. red coloring
1 oz. almond extract
3 cup water
lemon juice to taste
Bring to a boil and pour over cherries. Let cherries set in syrup l day. Drain syrup off cherries and heat syrup to boil then pour over cherries. Repeat this process for 3 mornings. On the 3rd day bottle cherries.
