Red Velvet Cake

½ c shortening
1½ c sugar
2 eggs
2 T cocoa
2 bottles (1 oz each) red food coloring
1 t vanilla
1 c buttermilk
½ t salt
1 ½ t soda
1 T vinegar
2½ c cake flour
Cream together shortening, sugar and eggs. Make a paste of cocoa and food color and blend with shortening mixture. Mix together salt, vanilla and buttermilk; add to creamed mixture alternately with flour. Combine soda and vinegar and fold into batter.
Bake into two 9 inch round or heart-shaped layer pans (or in one very large heart-shaped pan)heavily greased and floured. Bake at 350 for 30 minutes or until done.
Cool for 10 minutes, then remove from pans and cool thoroughly. Frost.

Butter Frosting
1 c soft butter
4 oz. cream cheese, room temperature
2 c powdered sugar
1 T vanilla
2 drops red food coloring
Mix all ingredients together until fluffy. Frost cake and decorate as desired.
